Preparation

  • Soak the pinto beans overnight in water. Drain and rinse.
  • In a large pot, cook the bacon over medium heat until crispy.
  • Add crumbled chorizo to the pot and cook until browned.
  • Add diced onion and cook until softened, about 5 minutes.
  • Stir in minced garlic and diced jalapeño, sautéing until fragrant.
  • Add soaked beans, cumin, and chili powder, stirring to combine.
  • Cover with water about an inch above the beans and bring to a boil.
  • Reduce heat to a simmer, cover, and cook until beans are tender, about 1.5 hours.
  • Check the tenderness of the beans, adjust seasoning with salt if needed.
  • Mash the beans to desired consistency with a potato masher or fork.

Notes

Pork Beans can be customized with additional spices or vegetable substitutions for dietary needs. Best served with crusty bread or over rice.
