Preparation

  • Start by soaking the pinto beans overnight in plenty of water. Drain and rinse them thoroughly the next day.

Cooking

  • In a large pot, cook the chopped bacon over medium heat until crispy, allowing the fats to flavor the pot.
  • Add the crumbled chorizo and cook for an additional 3-4 minutes, allowing it to brown.
  • Mix in the diced onion, minced garlic, and jalapeño; stir until the onions are translucent and garlic is fragrant.
  • Add the drained pinto beans to the pot and stir to coat with the mixture.
  • Season with cumin, chili powder, and salt, mixing well.
  • Cover the beans with enough water to submerge by at least an inch and bring to a boil.
  • Reduce to low heat, cover, and let simmer for about 1.5 hours until beans are fork-tender.
  • Use a potato masher to mash the beans to your desired consistency, adjusting seasoning if necessary.
  • Serve warm, optionally garnished with fresh herbs or cheese.

Notes

Store leftovers in an airtight container for up to 5 days in the refrigerator or freeze for up to 3 months. Consider adding bay leaves or smoked paprika for extra flavor.
