Ingredients
  

  • 6 pieces boneless pork chops
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp olive oil
  • 4 cups potatoes thinly sliced
  • 1 small onion thinly sliced
  • 2 cups cheddar cheese shredded, divided
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • ½ cup chicken broth
  • 1 tsp dried thyme
  • ½ tsp paprika
  • 2 tbsp butter optional
  • fresh parsley chopped, for garnish

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Season pork chops with salt, pepper, garlic powder, and onion powder.
  • Heat olive oil in a skillet over medium-high heat. Brown pork chops 3-4 minutes per side. Remove and set aside.
  • In the same skillet, sauté onions in butter (if using) until soft and translucent.
  • Sprinkle flour over onions, stir, then gradually whisk in milk and chicken broth. Cook until thickened.
  • Stir in thyme, paprika, and 1 cup shredded cheddar cheese until melted.
  • Layer half the sliced potatoes in a greased baking dish. Pour half the cheese sauce over. Repeat layers.
  • Arrange browned pork chops on top. Pour remaining sauce and sprinkle with remaining cheese.
  • Cover with foil and bake 40 minutes. Uncover and bake another 15-20 minutes until golden and bubbly.
  • Let rest for 10 minutes. Garnish with parsley and serve.

Notes

For a lighter version, substitute chicken for pork. Use gluten-free flour and dairy alternatives if needed.
