  • 1 cup shredded carrots
  • 1 cup sliced cucumbers
  • ½ cup chopped green onions
  • ¼ cup chopped cilantro
  • ¼ cup sesame seeds toasted

Dressing

  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey can substitute with maple syrup for vegan

Instructions

Preparation

  • Start by washing all your fresh produce thoroughly to remove any dirt or pesticides.
  • Shred the cabbage and carrots, then slice the cucumbers, making sure everything is bite-sized for easy eating.
  • Finely chop the green onions and cilantro, and set aside.

Mixing the Salad

  • In a large bowl, combine the shredded cabbage, carrots, sliced cucumbers, chopped green onions, and cilantro.
  • Toss them together gently to mix the ingredients evenly.

Making the Dressing

  • In a separate bowl, whisk together the soy sauce, rice vinegar, sesame oil, and honey until well-combined.
  • Taste it to adjust the flavors if needed.

Combine and Rest

  • Pour the prepared dressing over the mixed vegetables in the large bowl.
  • Using tongs, toss the salad gently but thoroughly.
  • Let the salad sit for about 10 minutes.

Toasting Sesame Seeds

  • In a dry skillet over medium heat, toast the sesame seeds for about 3-4 minutes until golden and fragrant.

Serving

  • Once the salad has rested, portion it into individual bowls or one large serving dish.
  • Sprinkle the toasted sesame seeds on top before serving.

Notes

Store leftover salad in an airtight container in the refrigerator for 2-3 days. Serve as a side dish or a light meal. Consider using different proteins or vegetables to personalize your salad.
