Instructions

Preparation

  • Gather all your ingredients and set out a large bowl for dry ingredients and a separate bowl for wet ingredients.

Mix Dry Ingredients

  • In the large bowl, combine flour, baking powder, cinnamon, nutmeg, salt, and sugar. Whisk until blended.

Mix Wet Ingredients

  • In the second bowl, mix pumpkin puree, Greek yogurt, and eggs until smooth.

Combine Ingredients

  • Gradually add the wet mixture to the dry ingredients, stirring gently to combine. Add milk if the batter is too thick.

Preheat Skillet

  • Place a skillet over medium heat and add a small amount of butter or oil.

Cook Pancakes

  • Pour about 1/4 cup of batter onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes.

Flip Pancakes

  • Carefully flip the pancake and cook for another 2-3 minutes until golden brown.

Repeat

  • Continue cooking with the remaining batter, keeping cooked pancakes warm in a low oven.

Serving

  • Serve warm with toppings like maple syrup, whipped cream, or fresh fruit.

Enjoy!

  • Enjoy your delicious Pumpkin Greek Yogurt Pancakes!

Notes

Avoid overmixing the batter to keep pancakes fluffy. Letting the batter rest for about 10 minutes before cooking can enhance fluffiness. Try different toppings for variety.
