Ingredients
  

  • 1 lb pumpkin gnocchi
  • 4 tbsp unsalted butter
  • 1 tbsp fresh sage chopped
  • salt to taste
  • black pepper to taste
  • Parmesan cheese grated, for serving

Instructions
 

  • Bring a large pot of salted water to a boil. Cook pumpkin gnocchi until they float to the top, 2-3 minutes. Drain well.
  • In a skillet, melt butter over medium heat until golden and nutty, about 3-4 minutes.
  • Add chopped sage and cook for 1-2 minutes until fragrant.
  • Toss the drained gnocchi in the brown butter and sage mixture, coating evenly.
  • Season with salt and pepper to taste.
  • Serve hot, topped with grated Parmesan and optional sage leaves for garnish.

Notes

For a dairy-free option, substitute butter with olive oil and Parmesan with nutritional yeast or vegan cheese. Potato gnocchi also works as a substitute for pumpkin gnocchi.
