Instructions
 

  • In a medium saucepan combine the steel cut oats and water and bring to a boil over medium heat.
  • Stir in the pumpkin puree, pumpkin pie spice, cinnamon, and salt until well blended.
  • Reduce heat to low and simmer, stirring occasionally, for about 20–25 minutes or until the oats are tender and creamy.
  • Taste and add maple syrup or brown sugar if you want a sweeter oatmeal.
  • Serve warm in bowls with your favorite toppings like nuts, seeds, or extra spice.

Notes
