  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 piece bell pepper, diced
  • 1 piece onion, diced
  • 2 cups cooked rice (or cauliflower rice for low-carb)
  • 1 packet taco seasoning Ensure it meets dietary requirements.

Optional Toppings

  • 1 cup shredded cheese Optional, can use dairy-free cheese.
  • 1 piece avocado, sliced Optional
  • 1 cup salsa or pico de gallo Optional
  • 1 cup lettuce, shredded Optional
  • 1 cup sour cream or Greek yogurt Optional

Preparation

  • Start by gathering and preparing all your ingredients. Dice the bell pepper and onion, rinse the black beans, and slice the avocado if using. Mince any additional fresh toppings like cilantro or jalapeños if desired.
  • In a large skillet, cook the ground beef (or your chosen substitute) over medium heat until it is browned, about 5-7 minutes. If using beef, drain the excess fat.
  • Add the diced onion and bell pepper to the skillet with the prepared meat. Cook for about 5 minutes or until the vegetables are softened, stirring occasionally.
  • Once your vegetables are tender, stir in the taco seasoning and mix well to coat the meat and veggies.
  • Add the rinsed black beans and corn to the skillet. Mix everything together and let it cook for an additional 2-3 minutes until heated through.
  • Prepare your rice if it’s not already cooked, or sauté cauliflower rice in another pan for a few minutes until tender.

Assembly

  • In serving bowls, layer the cooked rice or cauliflower rice at the bottom.
  • Spoon the beef and vegetable mixture over the rice layer.
  • If using cheese, sprinkle generously while the mixture is still hot to melt slightly. Add any additional toppings like avocado slices, salsa, shredded lettuce, or sour cream.
