A cozy and quick version of classic chicken and dumplings — tender chicken and vegetables in a savory broth with fluffy drop-style dumplings that cook right in the pot.
In a medium saucepan, combine 1½ cups milk, frozen peas and carrots, chicken, and condensed cream of chicken soup. Heat to boiling over high heat, stirring frequently. Reduce to a simmer.
In a medium bowl, mix 1 cup Bisquick™ baking mix with ⅓ cup milk until a soft dough forms.
Gently drop the dumpling dough by spoonfuls onto the simmering chicken mixture. Do not submerge the dumplings in liquid; they should sit on top.
Simmer over low heat for 10 minutes. Cover and cook 8–12 minutes longer, or until dumplings are cooked through and fluffy.
Sprinkle with paprika if desired and serve hot.
