  • 4 cups Rice Chex cereal
  • 1 cup white chocolate chips Can be substituted with dairy-free chocolate for a vegan version.
  • 1 cup powdered sugar
  • ½ cup strawberry cake mix
  • ½ cup strawberries, chopped Fresh strawberries preferred.
  • ¼ cup butter Can be substituted with coconut oil for a dairy-free version.
  • to taste Sprinkles (optional) For decoration.

Preparation

  • Gather all the ingredients and chop the strawberries into small pieces.

Cooking

  • In a large microwave-safe bowl, combine the white chocolate chips and butter. Melt in the microwave, stirring every 30 seconds until smooth (about 1 to 1.5 minutes).
  • Stir in the strawberry cake mix until no lumps remain and the mixture is a lovely pink color.
  • Gently fold in the Rice Chex cereal, ensuring every piece is coated without breaking them.
  • In a separate bowl or bag, combine the powdered sugar and chopped strawberries.
  • Transfer the cereal mixture to the powdered sugar mixture and shake or mix to coat evenly.

Cooling and Serving

  • Spread the mixture onto a lined baking sheet to cool for 10-15 minutes.
  • If desired, add sprinkles after cooling and gently toss to incorporate.
  • Serve in a bowl or package in bags for sharing.

Notes

Store in an airtight container at room temperature for up to a week. Can be frozen for up to three months.
