  • 4 large large tomatoes Firm tomatoes are best for stuffing.
  • 1 cup cooked quinoa Follow package instructions for cooking.
  • ½ cup black beans Rinsed and drained.
  • ½ cup corn Sweet corn can be fresh or frozen.

Spices and Herbs

  • ½ teaspoon cumin
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cup chopped cilantro Fresh cilantro adds flavor.

Optional Ingredients

  • ½ cup shredded cheese Optional, for added creaminess.

Preparation

  • Gather all ingredients and ensure the quinoa is cooked and cooled.
  • Preheat the oven to 375°F (190°C).

Tomato Preparation

  • Cut the tops off the large tomatoes and scoop out the insides carefully.

Mixing the Filling

  • In a bowl, combine cooked quinoa, black beans, corn, cumin, salt, pepper, and cilantro. Mix well.

Stuffing the Tomatoes

  • Stuff each hollowed tomato with the quinoa mixture, packing gently.
  • If using cheese, sprinkle it on top of each stuffed tomato.

Baking

  • Arrange the stuffed tomatoes in a baking dish and cover with aluminum foil.
  • Bake for 25–30 minutes until tomatoes are tender.

Serving

  • Let the tomatoes cool for 5–10 minutes before serving.
  • Serve warm, possibly with a side salad.

Notes

For added flavor, consider incorporating minced garlic or diced onion into the filling. Serve as an appetizer or main dish.
