  • ½ cup fresh or frozen raspberries Use fresh if available; frozen works well without defrosting.
  • ¾ cup almond milk or coconut milk Feel free to substitute with oat milk or soy milk.
  • 1 tbsp maple syrup Can be replaced with agave nectar or honey.
  • ½ tsp vanilla extract Optional for flavor enhancement.
  • ¼ cup chia seeds Essential for thickening the pudding.

Preparation

  • Gather and prepare all the ingredients.
  • Blend raspberries, almond milk, maple syrup, and vanilla extract until smooth.
  • Pour the mixture into a bowl.
  • Add chia seeds and whisk until fully integrated.
  • Cover and refrigerate for at least 1 hour or overnight to thicken.
  • Once set, check the consistency and add more milk if needed.
  • Spoon into serving bowls and add desired toppings before serving.

Notes

Store in an airtight container in the fridge for up to 4-5 days. Freezing is possible but best thawed overnight in the fridge.
