  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin or agar-agar Agar-agar can be used for a vegan option.
  • 2 tablespoons cold water Used for blooming the gelatin.

Preparation

  • Gather all your ingredients and measure them out precisely.
  • Wash fresh raspberries thoroughly and pat dry.

Cooking

  • In a small bowl, sprinkle the gelatin over the cold water and let it bloom for about 5 minutes.
  • Puree the raspberries in a blender or food processor until smooth, and strain through a fine mesh sieve if desired.
  • In a large mixing bowl, whip the heavy cream until soft peaks form. Gradually add powdered sugar and vanilla extract, continuing to whip until stiff peaks.
  • Heat the bloomed gelatin in the microwave for about 10-15 seconds or in a small saucepan over low heat until completely dissolved, then mix it into the raspberry puree.
  • Gently fold the raspberry mixture into the whipped cream until combined. Avoid deflating the cream.
  • Transfer the filling into a container or piping bag and chill in the refrigerator for at least 1 hour.

Serving

  • Serve the Raspberry Mousse Filling atop cakes or in individual cups as a delightful dessert.

Notes

This mousse can be customized by adding different flavors like chocolate or citrus. Store in an airtight container in the fridge for 3-4 days.
