  • 2 tablespoons water For dissolving gelatin, if used.

Preparation

  • Gather all your ingredients, ensuring your raspberries are fresh and washed.
  • In a medium bowl, mash the fresh raspberries. Add sugar and lemon juice, then let it sit for about 10 minutes.
  • In a separate bowl, whip the heavy cream until soft peaks form.
  • If using gelatin, dissolve it in warm water and allow it to cool slightly.
  • Gently fold the cooled gelatin mixture into the whipped cream.
  • Fold the raspberry mixture into the whipped cream until well combined.
  • Taste and adjust the sweetness if necessary by folding in more sugar.
  • Transfer the mixture to a container or piping bag and chill in the refrigerator for about 30 minutes.
  • After chilling, serve the Raspberry Mousse Filling as desired.

Notes
