  • 1 cup red lentils Rinsed before cooking
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can coconut milk (400ml) Can substitute with almond or soy milk.
  • 2 cups vegetable broth
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • to taste Salt
  • to taste Fresh cilantro for garnish

Instructions
 

Preparation

  • Rinse the red lentils under cold water to remove any impurities.
  • In a pot, sauté the chopped onion, minced garlic, and grated ginger over medium heat until the onions turn translucent.

Cooking

  • Add the curry powder and turmeric to the pot, stirring continuously for about a minute.
  • Mix in the rinsed red lentils, ensuring they are well-coated with the spice mixture.
  • Pour in the coconut milk and vegetable broth, stirring well to combine. Bring to a gentle boil.
  • Once boiling, reduce the heat to low and let the dahl simmer for about 20 minutes, stirring occasionally.

Finishing Touches

  • Taste and add salt as needed to enhance the flavor.
  • Garnish with fresh cilantro before serving.

Notes

This dish can easily be customized with additional vegetables like spinach, carrots, or bell peppers. It's also suitable for freezing; store in airtight containers.
