Main Ingredients

  • 1 cup red lentils Rinsed and drained
  • 2 cups water
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, grated
  • 1 teaspoon cumin powder
  • ½ teaspoon coriander powder
  • to taste salt
  • to taste black pepper
  • ¼ cup fresh parsley, chopped
  • ½ cup breadcrumbs Adjust for binding
  • as needed oil for frying Vegetable or olive oil

Instructions
 

Preparation

  • Gather all your ingredients in one area. Rinse the red lentils under cold water.
  • Prepare your vegetables by finely chopping the onion and mincing the garlic. Grate the carrot and chop the parsley.

Cooking

  • In a pot, combine the rinsed lentils and water. Bring to a boil, then simmer for 15-20 minutes until soft.
  • Drain any excess water and spread lentils on a plate to cool.
  • Sauté onion and garlic in oil until translucent, about 5 minutes.
  • In a mixing bowl, combine cooled lentils, sautéed onion, carrot, spices, parsley, and breadcrumbs. Mix thoroughly.
  • Form small patties of about 2-3 inches in diameter.
  • Heat oil in a frying pan over medium-high heat. Fry patties for 3-4 minutes on each side until golden brown.
  • Use a slotted spoon to remove the patties and drain on paper towels before serving.
  • Serve warm with preferred dips and enjoy.

Notes

For gluten-free options, use gluten-free breadcrumbs or oat flour. You can also customize with your favorite spices or herbs.
