Ingredients
  

For the Chocolate Cake Layers

  • 2 cups all-purpose flour Sifted
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder Sifted
  • 2 tsp baking powder
  • 1.5 tsp baking soda
  • 1 tsp fine salt
  • 1 cup warm water
  • 1 cup full-fat sour cream Room temperature
  • ½ cup vegetable or canola oil
  • 2 large eggs Room temperature
  • 2 tsp vanilla extract or vanilla bean paste
  • 1 tsp instant espresso or coffee Optional

For the Peanut Butter Buttercream Frosting

  • 1.5 cups unsalted butter Room temperature
  • 1 cup creamy peanut butter
  • 1 tsp vanilla extract or vanilla bean paste
  • ½ tsp fine salt
  • 7 cups powdered sugar or 2 lb. bag
  • cup heavy whipping cream Room temperature

For the Chocolate Ganache

  • ½ cup milk chocolate chips
  • 1 cup peanut butter For drizzling or filling
  • 2 cups chopped Reese's Peanut Butter Cups For decoration

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, sift together the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  • In another bowl, combine warm water, sour cream, vegetable oil, eggs, and vanilla extract. Whisk until smooth.

Baking and Assembling

  • Gradually add the wet mixture to the dry ingredients and mix until just combined.
  • Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Cool the cakes in the pans for 10 minutes, then transfer them to wire racks to cool completely.
  • For the frosting, beat softened butter and peanut butter together until creamy. Gradually add powdered sugar and then heavy whipping cream until light and fluffy.
  • Once cooled, place one cake layer on a serving platter, spread frosting on top, and then add the second layer. Frost the top and sides of the cake.

Ganache and Decoration

  • To make the ganache, heat heavy whipping cream until simmering. Add chocolate chips and stir until fully melted.
  • Pour ganache over the top of the cake, letting it drip down the sides. Decorate with chopped Reese's Peanut Butter Cups and drizzle additional peanut butter if desired.

Serving

  • Slice and serve your delicious cake, enjoying the chocolate and peanut butter flavors in every bite.

Notes

Store in an airtight container for up to a week, or freeze for up to three months. Reheat slices as desired.
