Ingredients
  

  • 1 medium mango peeled and diced
  • 1 medium cucumber peeled and diced
  • ½ cup blueberries rinsed
  • 1 ripe avocado peeled and diced
  • 1 tbsp olive oil
  • 1 tbsp fresh lime juice
  • 1 tbsp honey or maple syrup for vegan option
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh cilantro chopped

Instructions
 

  • Gather and prepare all the ingredients. Rinse blueberries and peel mango, cucumber, and avocado.
  • Dice mango, cucumber, and avocado into small, uniform cubes.
  • In a large bowl, combine diced mango, cucumber, blueberries, and avocado. Mix gently to keep pieces intact.
  • In a small bowl, whisk together olive oil, lime juice, honey, salt, and black pepper to make the dressing.
  • Pour dressing over the fruit and vegetable mixture. Toss gently to coat evenly.
  • Sprinkle chopped cilantro on top, toss lightly, and serve immediately or refrigerate for up to 1 hour.

Notes

For a spicy twist, add diced jalapeños or chili flakes. You can also swap mango with pineapple for a tropical version or add grilled chicken for a complete meal.
