Dressing Ingredients

  • 3 tablespoons fresh lime juice
  • 2 tablespoons honey Can use maple syrup or agave for vegan option.
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Preparation

  • Begin by preparing all your ingredients. Peel the mangoes and slice them thinly.
  • Slice the red onion, cucumber, and red bell pepper, and halve the cherry tomatoes.

Making the Dressing

  • In a small bowl, combine the fresh lime juice, honey, olive oil, salt, and black pepper.
  • Whisk everything together until well blended and smooth.

Combining Ingredients

  • In a large salad bowl, add the sliced mango, red onion, cucumber, red bell pepper, and cherry tomatoes.
  • Add the chopped cilantro and mint.

Dressing the Salad

  • Drizzle your prepared lime dressing over the salad mixture.
