Ingredients
  

Crust

  • 2 cups all-purpose flour
  • ½ cup powdered sugar
  • 1 cup unsalted butter cold

Filling

  • 8 oz cream cheese softened
  • ½ cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2 cups rhubarb chopped
  • ½ cup granulated sugar
  • 2 tbsp cornstarch

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  • In a bowl, combine flour and powdered sugar, then cut in the butter until crumbly. Press into the bottom of the pan to form the crust.
  • Bake the crust for 12–15 minutes until lightly golden.
  • In another bowl, beat cream cheese, sugar, egg, and vanilla until smooth. Spread over the pre-baked crust.
  • In a separate bowl, toss chopped rhubarb with sugar and cornstarch, then spread evenly over the cream cheese layer.
  • Bake for 25–30 minutes until the filling is set.
  • Allow to cool completely before slicing into bars.

Notes

For added sweetness, dust with powdered sugar before serving. Store in the refrigerator for best freshness.
