Preparation

  • Begin by washing and chopping the rhubarb into 1/2-inch pieces.
  • Ensure you have all other ingredients measured and ready.

Cooking

  • In a large pot, combine the rhubarb, water, and granulated sugar.
  • Stir the mixture and bring it to a simmer over medium heat.
  • Cover the pot and let it cook for approximately 5 minutes, stirring occasionally, until the rhubarb pieces become soft and tender.

Cooling and Blending

  • After removing the pot from heat, allow it to cool for at least 15 minutes with the lid off.
  • Transfer the cooled mixture into a food processor or a blender.
  • Blend the contents on high speed for about 1-2 minutes until the mixture is completely smooth and creamy.

Chilling and Churning

  • Pour the blended mixture into a suitable container, covering it tightly, and chill for several hours or overnight.
  • Once completely chilled, churn it using your ice cream maker according to the manufacturer's instructions.

Freezing and Serving

  • Transfer the sorbet to a freezer-safe container and freeze for at least 3-4 hours or until fully set.
  • When ready to serve, scoop it into bowls or cones and garnish with fresh mint or berries if desired.

Notes

Store sorbet in an airtight container to maintain texture. For easier serving, let it sit at room temperature for about 5-10 minutes before scooping.
