  • 2 cups glutinous rice flour Use certified gluten-free if allergic to gluten.
  • 1 cup water Gradually added to avoid lumps.
  • 1 cup sugar Can substitute with honey or agave syrup.
  • ¼ cup dried fruits Optional; customize as you prefer.
  • ¼ cup red beans Optional; can be replaced with nuts or seeds.
  • 1 tablespoon vegetable oil For greasing the pan.

Preparation

  • Start by gathering all your ingredients. Make sure you have everything measured out and ready to go.
  • Take a round cake pan and grease it generously with vegetable oil.
  • In a mixing bowl, combine the glutinous rice flour and sugar thoroughly.
  • Gradually add the water to the dry mixture, stirring continuously until smooth.
  • If using optional ingredients, stir them into the batter now.
  • Pour the batter gently into the prepared cake pan.

Cooking

  • Fill your steamer with water and bring it to a boil.
  • Place the cake pan into the steamer and cover it. Steam the Rice Cake for about 45 minutes.
  • Check the doneness by inserting a toothpick; if it comes out clean, your Rice Cake is ready.
  • Carefully remove the cake from the steamer and allow it to cool in the pan for a few minutes before inverting it onto a plate.

Serving

  • Once cooled, slice your Rice Cake into pieces and serve.

Notes

Store in an airtight container in the fridge for up to a week, or freeze it for longer storage. To reheat, use a microwave or steam briefly.
