Ingredients
  

Seafood and Base

  • 1 lb shrimp, peeled and deveined
  • 1 lb firm white fish (like cod or halibut), cut into chunks
  • 1 14 oz can diced tomatoes
  • 2 cups fish stock Can substitute with chicken or vegetable stock
  • ½ cup white wine

Vegetables

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped

Herbs and Seasoning

  • 2 tbsp olive oil For cooking
  • 1 tbsp fresh basil, chopped
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • Red pepper flakes (optional) For added heat

Instructions
 

Preparation

  • Gather all your ingredients. Clean the shrimp and fish. Chop the onion, bell pepper, and garlic.

Cooking

  • In a large pot, heat olive oil over medium heat. Add chopped onion and bell pepper, sauté until softened, about 5 minutes. Stir in minced garlic for an additional minute until fragrant.
  • Pour in the white wine, simmer for about 2-3 minutes.
  • Add diced tomatoes and fish stock. Bring the mixture to a boil.
  • Stir in the shrimp and fish, reduce heat to medium-low, cover, and simmer for about 10-15 minutes or until seafood is cooked through.
  • Stir in fresh basil and parsley. Season with salt, pepper, and optional red pepper flakes.
  • Allow the stew to sit off the heat for a few minutes to let the flavors meld.

Serving

  • Ladle the stew into bowls and serve hot, optionally with crusty bread or fresh herbs on top.

Notes

Great for gatherings and can be customized with different seafood. Optional lemon juice or heavy cream can enhance flavor.
