Preparation

  • Preheat your oven to 375°F (190°C). Gather all the ingredients and chop the fresh herbs.
  • In a large bowl, combine the ricotta, Parmesan, and eggs. Mix thoroughly to ensure a smooth blend.
  • Fold in the chopped herbs, salt, black pepper, and nutmeg.
  • Gently fold in the halved cherry tomatoes and the olive oil.
  • Grease a baking dish with olive oil and pour the ricotta mixture into it, spreading evenly.
  • Sprinkle the breadcrumbs on top.
  • Bake for about 30-35 minutes, until golden brown and firm in the center.
  • Remove from the oven and allow to cool for 5-10 minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Can be frozen for longer storage. Can be customized with different herbs or vegetables based on family preference.
