  • 1 pound carrots, peeled and cut into sticks Choose fresh, vibrant carrots.
  • 2 tablespoons olive oil

  • 1 cup ricotta cheese
  • 1 tablespoon honey Local or raw is best.
  • 1 teaspoon red pepper flakes Adjust to your taste.

Preparation

  • Wash and peel the carrots, then cut them into sticks.
  • Place the carrot sticks in a bowl, drizzle with olive oil, and sprinkle with salt. Toss to coat evenly.
  • Preheat your oven to 400°F (200°C).

Roasting

  • Spread the carrot sticks in a single layer on a baking sheet.
  • Roast in the oven for about 25-30 minutes, checking around the 20-minute mark to avoid burning.

Whipping Ricotta

  • In a bowl, mix the ricotta cheese and honey until smooth and creamy, using a hand mixer for a fluffier texture if desired.

Assembly

  • Once the carrots are tender and caramelized, transfer them to a serving platter.
  • Dollop the whipped ricotta over the carrots, then drizzle generously with hot honey.
  • Finish by sprinkling red pepper flakes on top for a pop of color and flavor.
