  • 8 ounces cream cheese, softened Use dairy-free cream cheese for a dairy-free version.
  • 1 can Rotel diced tomatoes and green chilies, drained Draining is crucial to avoid excess moisture.
  • 2 cups shredded cheddar cheese Can substitute with other cheeses if desired.
  • 1 cup almond flour (or regular flour) Almond flour is gluten-free.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper

Preparation

  • Gather all your ingredients. Measure out the sausage, cream cheese, Rotel tomatoes, shredded cheese, almond flour, and spices.
  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the sausage and softened cream cheese until well incorporated.
  • Fold in the drained Rotel diced tomatoes.
  • Stir in the shredded cheddar cheese.
  • Add almond flour, garlic powder, onion powder, salt, and pepper, mixing until fully incorporated.
  • Roll the mixture into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.

Baking

  • Bake the sausage balls in the preheated oven for 20-25 minutes until golden brown and the internal temperature reaches 160°F (70°C).
  • Allow them to cool for a few minutes before serving.

Notes

Store leftovers in an airtight container for up to 3-4 days. These sausage balls freeze well; freeze after baking and allow to thaw before reheating.
