  • 8 oz pasta any type of your choice
  • 1 can (10 oz) Rotel diced tomatoes choose mild or spicy depending on preference
  • 1 cup cream cheese softened
  • 1 cup shredded cheese cheddar or cheese blend
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt and pepper to taste

Instructions
 

  • Gather all ingredients and measure them out to prepare for cooking.
  • Boil pasta in salted water until al dente according to package directions. Reserve some pasta water, then drain and set aside.
  • Heat olive oil in a skillet over medium heat until shimmering.
  • Add Rotel diced tomatoes and cook for 2 minutes to blend flavors.
  • Stir in softened cream cheese until melted and combined into a creamy sauce.
  • Add the cooked pasta to the skillet and toss to coat in the sauce.
  • Mix in shredded cheese, garlic powder, onion powder, salt, and pepper. Stir until cheese melts and sauce thickens.
  • If the sauce is too thick, add a splash of reserved pasta water. Cook for another 2–3 minutes until creamy and well combined.
  • Serve hot with a sprinkle of fresh herbs or extra cheese if desired.

Notes

Customize your Rotel Pasta by adding cooked ground beef, sausage, or chicken for extra protein. For a vegetarian twist, toss in spinach, bell peppers, or zucchini. To make it spicier, use hot Rotel or add jalapeños. Store leftovers in the fridge for up to 3–4 days or freeze for 2 months.
