Preparation

  • Gather all your ingredients. Wash, peel, and slice the peaches.
  • In a mixing bowl, combine the sliced peaches with sugar, flour, lemon juice, and a pinch of salt. Toss gently until the peaches are coated evenly.
  • Roll out your crust on a lightly floured surface until it’s about 1/8 inch thick or carefully unroll a pre-made crust onto a baking sheet lined with parchment paper.

Assembly

  • Spoon the prepared peach mixture into the center of the crust, leaving a generous border.
  • Fold the edges of the crust over the peach filling, creating pleats as you go.
  • Brush the exposed crust with the egg wash.

Baking

  • Preheat the oven to 400°F (200°C). Bake for 25-30 minutes until the crust is golden brown and peaches are tender.
  • Let the galette cool slightly on a wire rack before serving.

Notes
