  • ¼ cup coarse sea salt for sprinkling Sprinkle on cookies before baking.

Preparation

  • Gather and measure all your ingredients to ensure seamless mixing.
  • Preheat your oven to 350°F (175°C).

Mixing

  • In a large mixing bowl, cream the softened butter and brown sugar together until fluffy.
  • Slowly drizzle in the honey and mix until fully incorporated.
  • In another bowl, sift together the all-purpose flour, baking soda, and salt.
  • Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
  • Fold in the chopped pistachios gently to ensure they’re evenly distributed.

Baking

  • Using a spoon or cookie scoop, drop generous spoonfuls of dough onto a lined baking sheet, leaving space between each.
  • Sprinkle a pinch of coarse sea salt on top of each cookie.
  • Bake in the preheated oven for about 10-12 minutes until golden brown at the edges but still soft in the center.
  • Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes
