Ingredients
  

Base Ingredients

  • 900 g russet potatoes, chopped into 1.25 cm cubes
  • 450 g sausages (chorizo, smoked, wild Italian, or preferred variety), sliced Choose variety based on preference.
  • 1-2 large red bell peppers, seeded and chopped into 1.25 cm cubes Use more for extra color and flavor.
  • 1 large onion, peeled and chopped into 1.25 cm cubes

Seasonings and Oil

  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • to taste sea salt and black pepper
  • 2-3 tablespoons olive oil or avocado oil, divided

Eggs and Cheese

  • 12 large eggs
  • 100 g cheddar cheese or alternative cheese of choice, shredded
  • 2 tablespoons chives, finely chopped For garnish

Preparation

  • Gather all your ingredients and chop the potatoes, sausages, red bell peppers, and onion into 1.25 cm cubes.

Cooking the Base

  • Preheat your oven to 220°C and line two baking sheets with parchment paper.
  • In a large baking sheet, combine the diced potatoes, sliced sausages, chopped bell peppers, and onion in a single layer.

Seasoning the Mixture

  • Drizzle the mixture with olive or avocado oil and sprinkle with paprika, onion powder, garlic powder, sea salt, and black pepper. Toss thoroughly.

Roasting

  • Spread the mixture evenly across the baking sheets and roast for 40-45 minutes, stirring halfway through, until the potatoes are golden and tender with crispy edges.

Preparing the Eggs

  • Crack the eggs into a bowl, season with salt and pepper, and whisk until smooth.

Scrambling the Eggs

  • Heat 2 tablespoons of oil in a skillet over medium heat. Pour in the whisked eggs and scramble until just set but still creamy.

Combining and Serving

  • Divide the roasted sausage and vegetable mixture among four bowls, top with scrambled eggs, a sprinkle of cheese, and chives.
