  • 1 lb sausage, sliced (your choice: pork, chicken, or turkey)
  • 2 cups bell peppers, chopped (mix of colors for vibrancy)
  • 1 cup zucchini, sliced
  • 1 cup onions, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Preparation

  • Gather and prepare all your ingredients. Slice the sausage, chop the bell peppers and onions, slice the zucchini, and mince the garlic.

Cooking

  • Heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook for about 5-7 minutes until browned.
  • Add the chopped onions and minced garlic to the skillet, sautéing until the onions turn translucent (about 3-4 minutes).
  • Stir in the chopped bell peppers and zucchini. Cook for another 5-7 minutes until the veggies are tender but still vibrant.
  • Season with salt and pepper, stirring well to combine. Adjust cooking time if necessary based on sausage thickness.
  • Remove from heat once everything is cooked and seasoned to your liking.

Notes

To store leftovers, place in an airtight container in the refrigerator for up to 3-4 days. This dish can also be frozen; thaw completely before reheating.
