Soup Base

  • 1 tablespoon vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 6 cups chicken broth Can be replaced with vegetable broth for vegetarian option.
  • 1 tablespoon soy sauce Use gluten-free soy sauce if necessary.
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon chili garlic sauce Optional for spice.

Main Ingredients

  • 24 pieces frozen potstickers Any flavor.
  • 2 cups shiitake mushrooms, sliced
  • 2 cups baby spinach
  • 3 pieces green onions, sliced
  • to taste salt and pepper
  • for garnish fresh cilantro

Instructions
 

Preparation

  • Gather and prep all ingredients: mince garlic and ginger, slice shiitake mushrooms, and chop green onions.

Cooking

  • Heat vegetable oil in a large pot over medium heat.
  • Add minced garlic and ginger to the pot, sautéing for about 1 minute until fragrant.
  • Pour in chicken broth, soy sauce, rice vinegar, and sesame oil. Add chili garlic sauce if desired, and allow it to simmer.
  • Carefully add frozen potstickers and let them simmer for about 5 minutes.
  • Incorporate sliced shiitake mushrooms and stir gently; let cook for an additional 3 minutes.
  • Add baby spinach and green onions, cooking for another 2-3 minutes until spinach wilts.
  • Season with salt and pepper to taste.
  • Ladle hot soup into bowls and garnish with fresh cilantro.

Notes

For a vegetarian version, use vegetable broth and veggie potstickers. Customize the soup with your choice of vegetables or adjust the spice levels as preferred.
