  • ½ cup cherry tomatoes, halved Any diced tomato variety can be used.
  • ¼ cup cucumber, diced Zucchini or radishes can be fun substitutes.
  • ¼ cup bell pepper, diced Any color of bell pepper is fine.
  • 2 tablespoons olive oil Avocado oil or yogurt can replace olive oil for a different flavor.
  • 1 tablespoon lemon juice Lime juice offers a zesty twist if desired.
  • to taste Salt and pepper Seasoning to taste.

Preparation

  • Gather all of your ingredients on the kitchen counter.
  • In a medium-sized bowl, add cottage cheese, olive oil, and lemon juice. Mix well until smooth and creamy.
  • Sprinkle a pinch of salt and freshly cracked pepper into the bowl. Mix well.
  • Wash and prepare your veggies, slicing the cherry tomatoes in half, dicing the cucumber and bell pepper.
  • Add the halved cherry tomatoes, diced cucumber, and bell pepper into the bowl with the cottage cheese mixture. Gently fold everything together.
  • Taste and adjust the seasoning if needed.

Serving

  • Serve immediately in individual bowls or family-style.
  • Consider adding freshly chopped herbs or a sprinkle of seeds or nuts.
