  • 8 oz pasta any type of your choice
  • 1 lb ground turkey lean preferred
  • 1 tbsp olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup spinach fresh or frozen
  • 1 tsp Italian seasoning
  • salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions
 

  • Prepare all ingredients by chopping onion and garlic. Measure spices and pasta ahead of time.
  • Bring a large pot of salted water to a boil and cook the pasta until al dente. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat.
  • Add diced onion and minced garlic. Sauté until fragrant and translucent, about 3–4 minutes.
  • Add the ground turkey, breaking it apart as it cooks. Cook for 6–7 minutes until browned and no longer pink.
  • Stir in diced tomatoes with their juices. Let simmer for 2 minutes.
  • Add spinach and Italian seasoning. Cook until the spinach wilts, about 2–3 minutes. Season with salt and pepper.
  • Add cooked pasta to the skillet and toss to combine. Let simmer on low heat for 5 minutes to absorb flavors.
  • Serve hot, topped with freshly grated Parmesan cheese if desired.

Notes

Make it spicy with red pepper flakes or add balsamic vinegar for a tangy twist. For a creamy version, stir in a splash of heavy cream or a handful of shredded mozzarella. Leftovers can be refrigerated for up to 4 days or frozen for 3 months. Reheat on the stove with a little water to restore texture.
