Preparation

  • Start by gathering all your ingredients. Wash and chop your mixed vegetables into bite-sized pieces.
  • Preheat your oven to 400°F (200°C).
  • In a medium bowl, whisk together honey, Dijon mustard, olive oil, garlic powder, paprika, salt, and pepper.
  • Using a brush or your hands, coat the chicken thighs generously with the honey mustard mixture.
  • Place the coated chicken thighs on a large sheet pan. Arrange mixed vegetables around the chicken.
  • Drizzle any leftover honey mustard mixture over the mixed vegetables.
  • Bake in the preheated oven for 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender.
  • Once cooked, let it cool for a few minutes before serving.
