  • 4 pieces chicken breasts Boneless and skinless
  • 2 pieces zucchinis, sliced
  • 1 piece red bell pepper, chopped
  • 1 piece yellow bell pepper, chopped
  • 1 piece red onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 400°F (200°C).
  • Gather all the necessary ingredients and wash your vegetables.
  • Slice the zucchinis, chop the bell peppers, and slice the red onion ensuring even sizes.
  • Mince the garlic cloves finely.

Cooking

  • In a large bowl, mix together the chicken breasts, sliced zucchinis, chopped bell peppers, sliced red onion, and minced garlic.
  • Drizzle with olive oil and add the dried oregano, dried thyme, salt, and pepper.
  • Toss all the ingredients until well-coated.
  • Spread the mixture evenly on a sheet pan in a single layer.
  • Bake for 25-30 minutes until chicken is cooked through and vegetables are tender.
  • Check for doneness using a meat thermometer to ensure chicken is at least 165°F (75°C).
  • Remove from oven and let it cool for a few minutes before serving.

Notes
