  • 1 pound shrimp, peeled and deveined
  • 1 cup orzo pasta

  • 4 cloves garlic, minced
  • 1 whole lemon, juiced and zested Zest is essential for flavor.
  • ¼ cup fresh parsley, chopped Can substitute with other herbs like basil or cilantro.

Preparation

  • Gather all ingredients: peel and devein the shrimp, zest and juice the lemon, and chop the parsley.

Cooking Orzo

  • In a medium pot, bring water to a boil and add orzo. Cook according to package instructions until al dente (approximately 8-10 minutes). Drain and set aside.
  • In a large skillet, heat olive oil over medium heat for about 1-2 minutes until shimmering.

Sautéing and Combining

  • Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant but not browned.
  • Introduce the shrimp to the skillet and cook for 3-4 minutes until pink and opaque.
  • Stir in lemon juice and zest, then add the cooked orzo and toss everything gently to coat.
  • Season with salt and pepper, and finish with chopped parsley. Toss again to combine.

Serving

  • Serve immediately, garnishing with additional parsley or lemon wedges if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2-3 days. Reheat gently with a splash of water or broth.
