  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons Cajun seasoning Adjust for spice preference.
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil

Preparation

  • Begin by prepping all your ingredients. Chop the onion, bell pepper, and celery beforehand to make cooking smoother. Ensure your shrimp are peeled and deveined, ready to toss into the mix.

Cooking the Base

  • In a large pot, heat 2 tablespoons of olive oil over medium heat. Once hot, add the chopped onions, bell pepper, and celery. Sauté them until they soften, which should take about 5 minutes.
  • Once the vegetables are softened, add the minced garlic and sliced sausage. Cook this mixture until the sausage is nicely browned, which should take about 7-10 minutes.

Adding Shrimp and Spices

  • Next, stir in the peeled shrimp along with 2 teaspoons of Cajun seasoning, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Cook this mixture until the shrimp turns pink, which usually takes about 3-4 minutes.

Finalizing the Dish

  • Add in the 2 cups of long-grain rice along with 4 cups of chicken broth. Stir everything together to ensure all ingredients are well distributed.
  • Raise the heat until the mixture reaches a boil, then reduce the heat, cover the pot, and let it simmer for about 20 minutes.
  • After the time is up, remove the pot from the heat. Using a fork, fluff the rice gently to separate any grains that may stick together. Serve hot and enjoy!

Notes

Reheat with a splash of water or broth to prevent dryness. Customize with your favorite vegetables or proteins.
