Ingredients
  

For the Filling

  • 6 oz canned tiny shrimp (drained)
  • 8 oz cream cheese (room temperature)
  • 4 oz shredded sharp cheddar cheese
  • 1 tsp Old Bay seasoning
  • ½ tsp dried minced onion
  • Pinch kosher salt

For the Jalapenos

  • 16 jalapenos (sliced in half, seeds and ribs removed)

Instructions
 

Preparation

  • Preheat your oven to 400°F.
  • Slice the jalapenos in half lengthwise and remove the seeds and ribs.

Mixing

  • In a mixing bowl, blend together the drained shrimp, cream cheese, shredded cheddar cheese, Old Bay seasoning, dried minced onion, and a pinch of kosher salt until smooth and creamy.

Stuffing

  • Generously fill each jalapeno half with the shrimp mixture.

Baking

  • Arrange the stuffed jalapenos on a lined baking sheet, spacing them out for even cooking.
  • Bake in the preheated oven for approximately 20 minutes, until the jalapenos are tender and the filling is golden brown.

Serving

  • Remove from the oven and let cool slightly before serving warm.

Notes

For a vegetarian option, consider substituting shrimp with black beans or lentils. Enjoy with guacamole or salsa.
