  • 2 pieces eggs Fresh eggs, cooked to your preference
  • ΒΌ cup ricotta cheese Can substitute with vegan ricotta or avocado

  • for cooking drizzle olive oil Use to cook eggs

Preparation

  • Gather all of your ingredients and utensils including a small frying pan, a spatula, and a plate for serving.
  • Place your slices of bread in the toaster or on a pan over medium heat and toast until golden brown and crispy.
  • In the same pan, drizzle a little olive oil over medium heat.
  • Crack the eggs into the pan and cook them sunny side up, over-easy, or your preferred style for about 3-4 minutes.
  • In a small bowl, mix ricotta cheese with salt, pepper, and herbs.
  • Spread a generous layer of ricotta cheese on each slice of toasted bread.
  • Carefully place a cooked egg on top of each slice of ricotta toast.
  • Sprinkle with salt and freshly cracked pepper, and scatter fresh herbs if using.
  • Serve immediately for the best flavor and texture.

Notes

It's best enjoyed fresh. Leftovers can be stored in an airtight container in the fridge for up to 2 days. Store components separately to maintain texture.
