Preparation

  • Start by gathering all your ingredients and measuring them out. Pat the chicken thighs dry with a paper towel.

Cooking

  • In a large skillet, heat the olive oil over medium-high heat until shimmering.
  • Season your chicken thighs with salt, black pepper, garlic powder, and paprika on both sides.
  • Carefully place the chicken thighs, skin-side down, into the hot skillet and allow them to sear without moving for about 5-7 minutes.
  • Flip the chicken over and reduce the heat to medium. Cook for an additional 10-15 minutes until the thighs reach an internal temperature of 165°F.
  • Check doneness using a meat thermometer. Insert it into the thickest part of the thigh without touching the bone.
  • Let the chicken rest in the skillet or on a plate for a few minutes before serving.
  • Just before serving, sprinkle fresh herbs over the chicken.

Notes

To store leftovers, let them cool to room temperature and place in an airtight container. They can last in the fridge for 3-4 days or can be frozen for 2-3 months. Always reheat properly to maintain juiciness.
