Seasoning and Searing

  • Season the beef roast generously with salt and pepper.
  • Heat 2 tablespoons of olive oil in a large oven-safe pot over medium-high heat and sear all sides of the roast until browned, about 4-5 minutes per side.

Cooking

  • Remove the roast from the pot and set it aside. In the same pot, add the chopped onions and minced garlic, sautéing until softened and fragrant, about 3-4 minutes.
  • Deglaze the pot with the cranberry juice and balsamic vinegar, scraping up the browned bits from the bottom.
  • Return the roast to the pot and pour in the beef broth, ensuring the roast is well covered.
  • Cover the pot and transfer it to a preheated oven. Cook for 3-4 hours, checking for tenderness. The meat should pull apart easily with a fork.

Finishing Touches

  • Once done, remove the roast from the pot and let it rest on a cutting board. This helps redistribute the juices.
