  • 2 pieces lemons (juiced and zested)
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

  • 1 cup chicken broth
  • 1 cup long-grain rice
  • 2 cups water

Preparation

  • Prep your workspace and ingredients by gathering everything needed and washing the lemons, garlic, and parsley.
  • In a bowl, combine the lemon juice, lemon zest, olive oil, minced garlic, dried thyme, and dried rosemary. Season with salt and pepper.
  • Place the chicken breasts in the slow cooker and pour the marinade over them, ensuring they are fully coated.
  • Add the chicken broth to the slow cooker, stirring gently to combine.

Cooking

  • Cover the slow cooker and set it to low for 4 to 6 hours, or high for 2 to 3 hours.
  • About 30 minutes before serving, add the long-grain rice and 2 cups of water to the slow cooker, stirring to combine.
  • Cover and let the rice cook for 20 minutes, checking to ensure it cooks evenly.
  • Once the rice is cooked, shred the chicken inside the pot and mix it with the rice.
  • Taste and adjust the seasoning with additional salt and pepper if needed.

Serving

  • Scoop out the chicken and rice onto plates and garnish with fresh parsley.

Notes

Store leftovers in an airtight container; they will last 3-4 days in the refrigerator and can be frozen for up to 3 months. To reheat, add a splash of water or broth for moisture.
