Preparation

  • Begin by measuring all your ingredients. Separating the egg white and yolk will help create airy pancakes.
  • Using an electric whisk, whip the egg white in a clean bowl until you achieve soft peaks.
  • In another bowl, mix the egg yolk, plain flour, baking powder, and caster sugar. Stir until combined, and then gradually add the milk while whisking.
  • Gently fold the whipped egg white into the pancake mixture.

Cooking

  • Heat half of the oil in a non-stick pan over medium heat.
  • Spoon a quarter of the pancake batter into the pan and cook for 2-3 minutes until golden.
  • Flip the pancake and cook for an additional 2-3 minutes.
  • Once cooked, transfer the pancakes to a low oven to keep warm.
  • In the same pan, increase the heat to high and add the remaining oil.
  • Divide the beef mince into two equal portions and flatten each into a thin patty. Cook for 2-3 minutes until browned.
  • Flip the patty, add a slice of cheese, and cook for another 1-2 minutes until melted.

Assembly

  • Layer one pancake on a plate, followed by the cheesy beef patty, drizzle with burger sauce, and add sliced gherkins. Top with another pancake.
  • Serve immediately for the best texture and flavor.
