  • 2 cloves Garlic, minced Adds depth of flavor to the glaze.

Preparation

  • Start by washing and peeling the carrots, then cut them into uniform chunks.

Cooking

  • Boil the prepared carrot chunks in salted water until tender, about 10-15 minutes.
  • Drain the carrots and transfer them to a flat surface.
  • Use a fork or potato masher to gently smash each piece.

Glazing

  • In a bowl, whisk together olive oil, honey or maple syrup, soy sauce, minced garlic, salt, and pepper.
  • Toss the smashed carrots in the glaze to ensure each piece is well coated.

Roasting

  • Spread the glazed carrots on a baking sheet lined with parchment paper.
  • Roast in a preheated oven at 425°F (220°C) for 20-25 minutes until golden and crispy.

Serving

  • Remove the carrots from the oven and garnish with fresh herbs if desired.

Notes

For a spicy kick, add chili flakes to the glaze. Leftovers can be stored in an airtight container for up to 3-4 days.
