Ingredients
  

For the filling

  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup crumbled blue cheese
  • ½ cup cream cheese, softened
  • ¼ cup chopped green onions
  • 6 slices smoked bacon, chopped

For the pork chops

  • 4 pieces bone-in pork chops Cut a pocket into each chop.
  • ¼ cup barbecue sauce For glazing.
  • 1 tablespoon honey
  • 1 teaspoon cayenne pepper Adjust based on spice preference.

Preparation

  • Gather all your ingredients, chop the bacon, shred the cheeses, and finely chop the green onions.

Cooking

  • In a skillet, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Transfer the bacon to a paper towel-lined plate.
  • In a large bowl, combine the shredded cheddar, mozzarella, crumbled blue cheese, softened cream cheese, and chopped green onions. Add the crispy bacon, season with salt and pepper, and mix well.
  • Cut a pocket into each pork chop with a sharp knife.
  • Stuff each pork chop pocket with the cheese and bacon mixture and secure with toothpicks if necessary.
  • Sear each stuffed pork chop in the skillet for about 3-4 minutes on each side until golden brown.
  • Transfer the seared pork chops to a baking dish, preheat your oven to 375°F (190°C), and bake for about 25-30 minutes or until the internal temperature reaches 145°F (63°C).
  • Mix the barbecue sauce, honey, and cayenne pepper in a small bowl while the pork chops are baking.
  • Once the pork chops are done baking, brush the sauce over each chop.
  • Let them rest for a few minutes before serving.

Notes

For added flavor, consider including fresh herbs or topping the dish with fried onions for extra crunch. Ensure not to skip the searing step to develop rich flavors.
