Preparation

  • Gather all your ingredients, wash and dice the potatoes, chop the onion, and slice the sausage. Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, combine the diced potatoes, sliced smoked sausage, chopped onion, and diced bell pepper. Stir to ensure even distribution.
  • Drizzle with olive oil, and season with garlic powder, paprika, salt, and pepper. Toss to coat all ingredients.
  • Transfer the mixture into a baking dish and spread evenly.

Baking

  • Bake in the preheated oven for 30-35 minutes, stirring halfway through, until the potatoes are tender and golden.
  • Check for doneness by piercing the potatoes with a fork; they should be tender.

Serving

  • Once baked, allow to cool for a few minutes. Garnish with fresh parsley before serving.
