Ingredients
  

For the Pork Chops

  • 4 pieces bone-in pork chops (about 1 inch thick) Boneless pork chops or chicken thighs can be used as substitutes.
  • 1 teaspoon salt Adjust to taste.
  • ½ teaspoon black pepper Adjust to taste.
  • 1 teaspoon paprika For added flavor.
  • 1 teaspoon garlic powder For seasoning.
  • 2 tablespoons vegetable oil Can substitute with olive oil.

For the Gravy

  • 1 medium onion (thinly sliced)
  • 3 cloves garlic (minced)
  • 3 tablespoons all-purpose flour For thickening the gravy. Substitute with cornstarch for gluten-free.
  • 2 cups chicken broth Low sodium preferred.
  • ½ cup heavy cream Can substitute with whole milk or coconut milk.
  • 1 teaspoon dried thyme Or 1 tablespoon fresh thyme.
  • 2 tablespoons butter

For the Potatoes

  • 2 pounds baby potatoes (halved or quartered if large)
  • Fresh parsley to taste (chopped for garnish)

Instructions
 

Preparation

  • Gather all your ingredients, measure them out and set them aside.
  • Pat the pork chops dry with a paper towel.

Seasoning

  • Sprinkle the pork chops generously with salt, pepper, paprika, and garlic powder on both sides.

Searing

  • In a large skillet, heat the oil over medium-high heat and sear the pork chops for about 3-4 minutes per side until golden brown. Remove and set aside.

Cooking Aromatics

  • In the same pan, add sliced onions and cook for about 5 minutes until soft and golden.
  • Stir in minced garlic and cook for an additional minute.

Making Gravy

  • Sprinkle flour over the onions, stir to coat. Gradually whisk in the chicken broth until smooth.
  • Add heavy cream, thyme, and butter; let simmer for 5 minutes.

Combining Ingredients

  • Nestle halved baby potatoes into the gravy and place the pork chops on top, spooning gravy over the meat.

Simmering

  • Cover and reduce heat to low, simmer for 25-30 minutes, stirring occasionally until potatoes are tender.

Serving

  • Remove from heat, garnish with parsley, and serve hot with extra gravy.

Notes

Make sure to season adequately and avoid overcrowding the pan while searing the pork chops. Letting the meat rest after cooking enhances juiciness.
