Ingredients
  

Rustic Apple Date Cake

  • 1 ½ cups apples peeled and diced
  • ¾ cup dates pitted and chopped
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • ½ cup unsalted butter melted and cooled
  • 2 eggs room temperature
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • ½ cup milk

Instructions
 

  • Preheat oven to 350°F (175°C). Grease an 8-inch cake pan.
  • In a bowl, whisk melted butter with brown sugar and granulated sugar until smooth.
  • Add eggs and vanilla extract, whisking until fully combined.
  • In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  • Add dry ingredients to wet ingredients alternately with milk, mixing just until combined.
  • Fold in diced apples and chopped dates. Spread batter evenly into prepared pan.
  • Bake for 35–40 minutes, or until a toothpick inserted comes out clean. Cool slightly before slicing.

Notes

This rustic cake is lightly sweet and wonderfully moist. It pairs beautifully with yogurt, whipped cream, or a dusting of powdered sugar.
