Ingredients
  

For the cake

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ½ teaspoon salt
  • ½ cup unsalted butter softened
  • 1 cup brown sugar packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup apples, peeled and diced (about 2 medium apples)
  • 1 cup pitted dates, chopped
  • ½ cup buttermilk

For the toffee

  • 1 cup granulated sugar
  • ½ cup unsalted butter
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract
  • pinch salt

Instructions
 

Preparation

  • Gather all your ingredients. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper for easy removal.
  • In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt. Set aside.
  • In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, which should take about 3-4 minutes.
  • Add the eggs one at a time, ensuring to mix well after each addition. Stir in the vanilla extract until fully combined.

Baking

  • Gradually add the dry ingredient mixture to the butter mixture, alternating with the buttermilk. Mix until just combined.
  • Gently fold in the diced apples and chopped dates until they are evenly distributed throughout the batter.
  • Pour the batter into your prepared loaf pan, ensuring to smooth the top with a spatula for an even bake.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for about 10 minutes. Carefully turn the cake out onto a wire rack to cool completely.

Toffee Preparation

  • In a saucepan over medium heat, combine the granulated sugar and butter. Stir until melted and at a rolling boil.
  • Allow to boil without stirring for about 3-4 minutes, or until the mixture turns a light amber color.
  • Remove the saucepan from the heat and stir in the heavy cream, vanilla extract, and a pinch of salt.
  • Let the toffee cool slightly before drizzling it generously over the cooled cake. Allow the toffee to set before slicing and serving.
